We put bacon on our bacon!

Aw, yeah, baby … you read it right: today we put the world’s BEST bacon hot sauce (bar none!) on our bacon!

 

Introducing: Porcus Candied Bacon Strips!

In addition to Porcus Infernum hot sauce (click here to buy), here’s what you’ll need:

  • 20160131_143535* 1 lb THICK CUT bacon
  • * 1 bottle Porcus Infernum (the world’s best bacon hot sauce)
  • * 1/4 Cup Dark Brown Sugar (may need 1/2 C or more, so have extra on hand)
  • * 1 Tbsp Dark Brown Sugar
  • * 2 Tbsp Maple Syrup
  • * 4 Tbsp dark beer (we used an imperial stout from Adroit Theory Brewing)
  • * 2 Tbsp Maple Syrup

For starters, let’s pre-heat the oven to 350F.

 

Next, gently pat down each slice of bacon with a decent layer of brown sugar, on both sides.

Although I’ve done it with as little as 1/4 Cup, it’s quite easy to use plenty more! EXTRA CREDIT: for extra hot version, sprinkle some Thai Dry onto each side of each strips of the bacon that you want hotter.

 

Place the bacon strips on the cooling rack(s) and place in the oven for 10 minutes, then flip and allow to cook for another 5~10 minutes. While doing the first stage of cooking the bacon, take the other ingredients (Porcus Infernum, beer, Maple syrup, and 1 Tbsp of brown sugar) and whisk together well.

Once the fat starts rendering (about 15 minutes or so) it’s time to start the basting routine:

Every 5~7 minutes, turn the bacon and lightly baste with the Porcus & beer

Continue flipping every 5~7 minutes until done (approximately 35~45 minutes).

 

20160131_173140Once removed from the over, make sure to keep flipping ever few minutes to reduce the amount that the bacon sticks to the rack.

 

Once cooled, grab your favorite beer and . . .

Super Chicken Wings

Chicken-Wings-on-Baking-Rack-700x467So, the countdown to Super Bowl Sunday is under way! Here are some tips to creating some KILLER CHICKEN WINGS!
 
For starters … if you prefer to toss your wings in sauce before serving, I recommend giving Phoenix and Bacon Taco a try this year! Separately, of course.
If using Phoenix, we suggest you slightly thin the sauce with either white wine vinegar or melted butter. A ratio of 5 parts sauce to 1 part vinegar or butter seems to work best.

As for how to best prep your wings, many are hardcore about frying, but if that’s not your thing, the alternative is baking them in the oven, This can often lead to not-so-crisp wings and a bit of disappointment, but we’re here to help you avoid such a calamity! 
 

Awesome baked wings, how to:

 
#1: before cooking, pat dry and lightly sprinkle with baking POWDER (I prefer to use an empty spice or salt shaker, and use approx. 1/2 Tbsp per pound of wings)
 
**** There’s something VERY important about the above step. It *MUST* be Baking Powder, NOT “baking soda” or “bi-carb soda” … which will render your wings completely NON edible.
 
*** *** seriously, make CERTAIN that you use baking POWDER (same stuff used to make muffins rise)
 
#2. bake the wings on a wire rack seated on a cookie sheet, and do so in TWO stages. First stage is at 250F for 30 to render most of the fat, and the second stage is to finish them off at 450F for another 45+ minutes, or until crispy.
 
I know, I know … it’s a LOT quicker to deep fry them, and PLEASE feel free to do so if so inclined, of course!

Psycho Chicken Salad

1760729_origOne simple ingredient can radically transform the humble, traditional chicken salad. We’ve found that more straightforward cooking methods make for the best chicken meat for this recipe, be it baked, fried, grilled or rotisserie. Smoking tends to throw everything off balance, but that’s a personal preference and opinion. Let us know what you think!

INGREDIENTS

  • 4 cups cooked chicken, diced
  • 1 cup mayonnaise
  • 1 stalk celery, diced into 1/4-inch pieces
  • 2+ Tbsp Psycho Tropic hot sauce
  • 1/4 cup sweet onion, or scallion, diced into 1/4-inch pieces
  • 2 Tbsp finely chopped parsley
  • 1 1/2 tsp finely chopped fresh dill
  • 2 tsp strained freshly squeezed lemon juice
  • 1 tsp Dijon mustard
  • 2 tsp kosher salt
  • ground black pepper

In a mixing bowl, toss together the chicken, celery, scallions and herbs. Set aside.

In a small bowl, whisk together the mayonnaise, lemon juice, mustard, salt and pepper to taste. Add to the chicken and mix gently until combined. Refrigerate until ready to serve.

Serve on a bed of lettuce with sliced tomatoes, in half an avocado or in a chicken club sandwich.
