Our sauces are big, bold, and nothing like what many people expect when they think “hot sauce.” None of our sauces are vinegar based. The Louisiana style has been perfectly done by some other great sauce makers and we would just as soon refer people to our favorites rather than duplicate what’s already been done.

Otherwise, our sauces are low in sodium, and range in heat from Mild to Medium, in most cases. There are a few exceptions for the fire breathing culinary masochists of the world.

Lastly, we enjoy working work with some unusual and exotic spices you might be hard pressed to find elsewhere … Berbere from Ethiopia, Garam Masala from India, Jerk seasoning from Jamaica, Epazote leaf from Mexico, Gumbo Filé powder (sassafras leaf) from Louisiana, and more.  We don’t claim titles like “better” or “best” … we simply do out own thing and enjoy sharing these treats with a growing base of enthusiastic fans.

Uses: Versatile enough that it serves as a table sauce for families around the world. Awesome on eggs, omelets, pulled pork, chicken, pasta dishes, hamburgers, hot dogs, pizza, and insanely good in a Bloody Mary!

Ingredient overview: Bacon, Ham, Tomato, Onion and a mild flair of Garlic.

Notes: very few sauces have drawn as much attention upon its release as Porcus. At the time of introduction, this was the planet’s first usable, convincing, gourmet bacon hot sauce, and it has remained a favorite and staple for countless people around the planet. Originally named “Porcus Infernum,” in early 2017 the decision was made to drop the second half of the name and was renamed to the more simple, “Porcus.” This was done for the sake of convenience and clarity, and due to the fact that the word “infernum” caused too many people to assume it was extra hot, which it clearly is not.

Ingredient overview: Taco Tuesday in a bottle! LOADS of toasted Cumin, chopped onion, diced tomato, and toasted garlic.

Notes: Taco Tuesday in bottle! This is a rich, chunky, intense taco sauce with a smooth bacony finish. This is not just a “medium heat bacon sauce,” this is an over-the-top Tex-Mex, Southwestern sauce that goes great on wide variety of dishes (and does a great job of taking your omelette to a whole new level).

Uses: like Porcus, this is a table sauce suitable for all manner of breakfast, lunch and dinner dishes.

Ingredient overview: Bacon & ham flavors, woven through a base of Ancho, Guajillo & Pasilla chile peppers.

Notes: where Porcus is a bright, mild, bright, tart and somewhat sweet sauce, Bacon-X is a richer sauce with deep, earthy flavors, and an overall “dark” presence and a lingering and slowly building heat that has made it a favorite of popular favorite for many. While this is among the hottest of our regular production sauces, it is still one that is approachable to a rather large audience.

Highlights: The ORIGINAL IPA hot sauce! A semi sweet Mango Habanero, with overtones of jerk seasoning and sweet onion.

Ingredient overview: Fever Dream Mango Habanero IPA, Mango, Habanero and Fatilii chile peppers, Sweet Onion, Toasted Garlic, and a hint of peach.

Notes: this was our first collaboration hot sauce with the bad boys at Flying Dog Brewery. Where “mango habanero” is a sauce style that is typically syrupy sweet, this one is semi sweet due to being based around an IPA (which is the #1 ingredient). If you’ve ever wished Tom Selleck would visit you in a fever dream, this sauce may very well help make that dream come through!

Highlights: Our biggest, boldest IPA hot sauce to date! If you love blood orange (or the Bloodline ale), you are gonna love this sauce!

Notes: our most recent (third) collaboration hot sauce with the bad boys at Flying Dog Brewery. Working hand-in-hand on this recipe with Flying Dog’s brewmaster as well as their chief of operations, both of whom are chileheads, definitely shows. This is our most in-your-face IPA hot sauce to date, and this one is a genuine flavor bomb!

Highlights: Samuel Adams(R) Winter Lager, fire roasted Italian red pepper, Orange zest, Ginger, a hint of Cinnamon and other spices.

Ingredient overview: Samuel Adams Winter Lager, Fire Roasted Italian red peppers, Sweet Onion, Toasted Garlic, and just hint of ginger, gumbo filé powder, and cinnamon.

Notes: a moderate level of citrus blast rides atop distinctive flavor of the seasonal Winter Lager, by Samuel Adams(R). This collaboration was our first time dealing with a lager, and the first time we were commissioned to specifically draw out the background flavors AND maintain the presence of the underlying beer. This is also the first time we leaned so heavily on beer being the #1 ingredient by weight. Find our for yourself why this sauce got the nod from the team at Boston Beer as an official collaboration.

 

Freak-ShowFREAK SHOWbuy-NOW

Highlights: An intense non traditional verde / jalapeno sauce with a big toasted garlic Samuel presence.

Uses: pairs well with a variety of southwestern and Mexican dishes. Also amazing on scrambled eggs and omelets.

Ingredient overview: Fire Roasted Jalapeno, Pickled Tomatillo, Sweet Onion, Toasted Garlic, and Epazote leaf.

Notes: this sauce was originally commissioned by the stunt coordinator of the 1st 4 seasons of the TV series, American Horror Story, as a gift from him to the cast & crew. The base of this sauce is fire roasted Jalapenos rather than tomatillo is one of the first things any fan of traditional verde sauces will quickly notice. Also, we went through a LOT of different options when it came to garlic and settled upon a very expensive, “top shelf” toasted garlic that lends a flavor that is simply not possible to duplicate otherwise. LOADS of sweet onion, low in sodium, and an all around treat loved by Texans, chile fans from New Mexico, and “Yankees” alike! The only regret you’ll have buying this sauce is not buying enough of it!
